Ingredients
  

  • Mixed nuts – 4 cups unsalted
  • Egg white – 1 large
  • Granulated sugar – ½ cup
  • Chipotle chili powder – 1 teaspoon
  • Smoked paprika – ½ teaspoon
  • Ground cumin – ¼ teaspoon
  • Cayenne pepper – ¼ teaspoon
  • Salt – ¾ teaspoon
  • Water – 1 tablespoon

Instructions
 

Preheat the Oven

  • Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Egg White

  • In a bowl, whisk egg white with water. Whisk until slightly frothy and foamy.

Mix Spices

  • In another bowl, mix sugar, chipotle powder, paprika, cumin, cayenne and salt until combined.

Coat the Nuts

  • Add nuts to egg white mixture. Stir well so every nut is lightly coated.

Add Spice Mix

  • Sprinkle spice mixture over nuts. Toss gently until nuts are evenly covered with spices.

Spread on Tray

  • Spread nuts in a single layer on prepared baking sheet. Do not overcrowd the tray.

Bake the Nuts

  • Bake for 30 minutes. Stir once halfway for even baking and coating.

Cool Completely

  • Remove from oven. Let nuts cool fully. They will become crunchy as they cool.

Notes

  • Use unsalted nuts to control salt level.
  • Mix spices evenly for balanced flavor.
