Ingredients

  • 4 Chilean sea bass fillets about 6 ounces each
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 lemon sliced
  • 1 tablespoon fresh parsley chopped
  • 1 clove garlic minced

Instructions

Prepare the Fish

  • Pat the sea bass dry using paper towels. Dry fish helps get a better texture while cooking.

Season Simply

  • Rub olive oil on both sides. Sprinkle salt and pepper evenly over each fillet.

Heat the Pan

  • Heat an oven-safe skillet on medium heat. Add butter and let it melt gently.

Sear the Fish

  • Place fish in the pan, skin side down. Cook for three minutes until lightly golden.

Add Flavor

  • Add garlic and lemon slices to the pan. Spoon butter over the fish gently.

Finish in Oven

  • Move the skillet to a preheated oven at 400°F. Cook for ten minutes until flaky.

Garnish and Serve

  • Remove from oven. Sprinkle parsley on top. Serve hot with lemon slices.

Notes

  • Always pat fish dry before seasoning.
  • Do not overcook. The fish should flake easily.
  • Use fresh lemon for best taste.
  • Keep seasoning light to enjoy fish flavor.
