Ingredients
  

  • 3 cups cooked chicken shredded
  • 1/2 cup mayonnaise
  • 1/4 cup plain yogurt
  • 1 teaspoon curry powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 apple peeled and chopped
  • 1/2 cup red grapes halved
  • 1/4 cup slivered almonds
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice

Instructions
 

Prepare the Chicken

  • Shred cooked chicken into small pieces. Place it in a medium mixing bowl.

Mix the Dressing

  • Add mayonnaise, yogurt, curry powder, salt and pepper. Stir until smooth and creamy.

Add Fruits and Nuts

  • Add chopped apple, halved grapes and slivered almonds. Mix gently with the chicken.

Add Fresh Herbs

  • Stir in parsley and lemon juice. This adds brightness and fresh flavor to the salad.

Chill Before Serving

  • Cover the bowl and place in fridge for at least 30 minutes. Flavors will blend better.
