Ingredients
  

For Chicken:

  • 4 boneless skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 eggs beaten
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 cup olive oil

For Topping:

  • 1 cup marinara sauce
  • 1 cup fresh mozzarella cheese sliced

For Arugula Salad:

  • 3 cups fresh arugula
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions
 

Prepare the Chicken

  • Place chicken breasts on a board. Pound them gently to even thickness. Season with salt, pepper and garlic powder. This helps cook evenly and adds good flavor.

Set Up Breading Station

  • Take three bowls. Add flour in one, beaten eggs in another and breadcrumbs mixed with Parmesan in the third. This setup makes coating easy and clean.

Bread the Chicken

  • Dip each chicken piece into flour first. Then dip into eggs. Finally coat with breadcrumb mixture. Press gently so crumbs stick well and create a crispy layer.

Fry the Chicken

  • Heat olive oil in a skillet over medium heat. Fry chicken for 3–4 minutes per side. Cook until golden brown. Do not fully cook yet, as baking will finish it.

Add Sauce and Cheese

  • Place fried chicken on a baking tray. Spoon marinara sauce over each piece. Add slices of mozzarella on top. This creates a rich and cheesy topping.

Bake the Chicken

  • Preheat oven to 180°C (350°F). Bake chicken for 15–20 minutes. Cheese should melt and bubble. Chicken should be fully cooked and juicy inside.

Prepare Arugula Salad

  • In a bowl, add fresh arugula. Drizzle olive oil and lemon juice. Add salt and pepper. Toss gently. This fresh salad adds brightness to the dish.

Serve Together

  • Place baked chicken on a plate. Add a handful of arugula on top or side. Serve immediately while hot. Enjoy the mix of crispy, cheesy and fresh flavors.
