Ingredients
  

  • Boneless chicken breasts – 4 pieces
  • All-purpose flour – ½ cup
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Olive oil – 3 tablespoons
  • Unsalted butter – 2 tablespoons
  • Mushrooms sliced – 8 ounces
  • Garlic minced – 2 cloves
  • Marsala wine – ¾ cup
  • Chicken broth – ¾ cup
  • Fresh parsley chopped – 2 tablespoons

Instructions
 

Prepare the Chicken

  • Cut chicken breasts in half. Pound lightly. Season with salt and pepper. Coat lightly with flour.

Heat the Pan

  • Heat olive oil and butter in a skillet. Keep heat medium. Wait until butter melts fully.

Cook the Chicken

  • Add chicken to hot pan. Cook each side until golden. Remove chicken and set aside.

Cook the Mushrooms

  • Add mushrooms to same pan. Stir often. Cook until soft and lightly browned.

Add Garlic

  • Add minced garlic. Stir for thirty seconds. Do not let garlic burn.

Make the Sauce

  • Pour Marsala wine into pan. Scrape brown bits gently. Let wine simmer two minutes.

Add Broth

  • Add chicken broth. Stir well. Let sauce simmer until slightly thick.

Finish the Dish

  • Return chicken to pan. Spoon sauce over chicken. Simmer five minutes until cooked.

Garnish

  • Sprinkle fresh parsley on top. Serve hot and fresh.

Notes

  • Use dry Marsala wine only.
  • Slice mushrooms evenly for even cooking.
  • Do not overcrowd the pan.
  • Let sauce simmer slowly.
  • Use fresh parsley for better taste.
