Ingredients
  

  • 4 boneless skinless chicken breasts
  • 4 slices ham
  • 4 slices Swiss cheese
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 large eggs beaten
  • 1 ½ cups breadcrumbs
  • 2 tablespoons Dijon mustard
  • 2 tablespoons butter melted
  • 2 tablespoons vegetable oil

Instructions
 

Preheat the Oven

  • Preheat oven to 190°C (375°F). Grease a baking dish lightly with butter or oil. This prevents sticking and helps the coating crisp.

Prepare the Chicken

  • Place chicken breasts between plastic wrap. Pound lightly with meat mallet to ½ inch thickness. This ensures even cooking and tender chicken.

Assemble Chicken

  • Lay one slice of ham and one slice of Swiss cheese on each chicken breast. Roll tightly and secure with toothpicks.

Prepare Coating

  • Mix flour, salt and pepper in one bowl. Beat eggs in another bowl. Place breadcrumbs in a third bowl. This helps for easy dredging.

Coat the Chicken

  • Dredge chicken in flour, then dip into eggs and finally coat with breadcrumbs. Press gently to adhere breadcrumbs to chicken.

Brown the Chicken

  • Heat butter and oil in a skillet over medium heat. Brown chicken rolls on all sides, about 3–4 minutes per side. This gives a crispy, golden crust.

Bake the Chicken

  • Transfer browned chicken to baking dish. Bake in preheated oven for 20 minutes. Chicken should reach internal temperature of 74°C (165°F).

Rest and Serve

  • Remove toothpicks and let chicken rest for 5 minutes. Slice carefully if desired. Serve hot with your favorite sides for a complete meal.
