Ingredients

  • ½ teaspoon black pepper

  • 2 cloves garlic minced
  • 1 cup mushrooms sliced
  • 1 cup broccoli florets
  • 1 cup shredded carrots
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh thyme
  • 1 cup shredded Gruyère or Swiss cheese
  • ½ cup breadcrumbs optional for topping

Instructions
 

Prepare the Chicken

  • Season chicken breasts with salt and pepper. Heat olive oil in a skillet. Cook chicken until golden on both sides. Remove and set aside to rest.

Sauté Vegetables

  • In the same skillet, add diced onion and garlic. Cook until soft and fragrant. Add mushrooms, broccoli, and carrots. Sauté for 5 minutes until vegetables soften slightly.

Make the Sauce

  • In a mixing bowl, combine heavy cream, chicken broth, Dijon mustard, and thyme. Stir well. Pour mixture over the vegetables in the skillet. Bring to a gentle simmer.

Assemble the Casserole

  • Preheat oven to 375°F (190°C). In a baking dish, place cooked chicken. Pour vegetable and sauce mixture over chicken. Sprinkle shredded Gruyère cheese evenly on top.

Optional Topping

  • If desired, sprinkle breadcrumbs over the casserole for a crunchy topping. Lightly drizzle with olive oil to help browning.

Bake Until Golden

  • Bake casserole in preheated oven for 25–30 minutes. Cheese should melt and topping turn golden. Remove carefully and let it rest for five minutes.
