Ingredients
  

For the crust:

  • 2 ½ cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup cold unsalted butter cubed
  • 6 –8 tablespoons ice water

For the filling:

  • 5 cups fresh cherries pitted
  • ¾ cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • 1 tablespoon butter

For topping:

  • 1 egg beaten
  • 1 tablespoon coarse sugar

Instructions
 

Make the Pie Dough

  • Mix flour, sugar and salt in a bowl. Add cold butter cubes. Cut butter into flour until crumbly. Add ice water slowly. Mix gently until dough forms.

Chill the Dough

  • Divide dough into two balls. Flatten into discs. Wrap with plastic wrap. Chill in the fridge for at least 30 minutes. Cold dough makes a flaky crust.

Prepare the Cherry Filling

  • Put cherries in a saucepan. Add sugar and cornstarch. Mix well. Cook on medium heat until thick. Stir often. Add lemon juice, vanilla, and almond extract.

Roll the Bottom Crust

  • Roll one dough disc on a floured surface. Make a 12-inch circle. Place gently into the pie dish. Press lightly into the edges. Trim extra dough.

Add the Filling

  • Pour cherry filling into the crust. Spread evenly with a spoon. Dot the top with small butter pieces. This adds rich flavor while baking.

Add the Top Crust

  • Roll the second dough disc. Place over the filling. Trim edges and crimp with fingers or fork. Cut small slits on top to release steam.

Brush and Bake

  • Brush top crust with beaten egg. Sprinkle coarse sugar. Bake at 375°F (190°C) for 50–55 minutes. Bake until golden brown and bubbly.

Cool Before Serving

  • Remove pie from oven. Let it cool for at least two hours. Cooling helps filling set properly. Slice carefully and serve.
