Ingredients
  

  • 2 cups fresh cherries pitted
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1 cup whole milk
  • 1/2 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter for greasing dish
  • Powdered sugar for dusting

Instructions
 

Preheat the oven

  • Preheat oven to 350°F (175°C). Grease the baking dish with butter to prevent sticking.

Prepare the cherries

  • Wash and pit the cherries. Spread them evenly in the greased baking dish.

Mix eggs and sugar

  • In a mixing bowl, whisk eggs and sugar together until smooth and slightly frothy.

Add milk and vanilla

  • Whisk in milk and vanilla extract until fully combined and smooth.

Add flour and salt

  • Sift flour and salt into the egg mixture. Whisk gently to remove lumps and form a smooth batter.

Pour batter over cherries

  • Slowly pour the batter over cherries in the baking dish. Spread evenly to cover all fruit.

Bake the clafoutis

  • Place the dish in the oven. Bake for 35–40 minutes until puffed, golden, and set in the center.

Cool slightly

  • Let the clafoutis cool for 5–10 minutes. The custard will firm slightly while keeping a soft texture.

Dust with powdered sugar

  • Use a sifter to sprinkle powdered sugar evenly over the top of the clafoutis.

Serve warm

  • Cut into slices and serve warm. Optionally, add a dollop of whipped cream or fresh berries.
