Ingredients
  

  • 1 large head cauliflower chopped
  • 2 tablespoons olive oil or butter
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken or vegetable broth
  • 1/2 cup heavy cream or half-and-half
  • Salt and pepper to taste
  • Fresh chives or parsley for garnish optional

Instructions
 

Prepare the Vegetables

  • Wash and chop the cauliflower into small florets. Chop onion and mince garlic. Set aside for cooking.

Sauté Onion and Garlic

  • In a large pot, heat olive oil or butter over medium heat. Add onions and garlic. Cook until soft and fragrant, about 3–4 minutes.

Add Cauliflower

  • Add chopped cauliflower to the pot. Stir well to coat with the onion and garlic mixture. Cook 2–3 minutes for flavor blending.

Add Broth

  • Pour chicken or vegetable broth into the pot. Bring to a gentle boil. Reduce heat and simmer for 15–20 minutes until cauliflower is tender.

Blend the Soup

  • Use an immersion blender or standard blender to puree soup until smooth and creamy. Blend carefully in batches if using a standard blender.

Add Cream

  • Return blended soup to the pot. Stir in heavy cream or half-and-half. Heat gently and season with salt and pepper to taste.

Serve

  • Ladle soup into bowls. Garnish with fresh chives or parsley if desired. Serve warm with crusty bread or a side salad.

Notes

  • Use fresh cauliflower for better flavor and texture
  • Don’t overcook vegetables before blending
  • Blend until completely smooth for a silky texture
  • Add cream gradually to control richness
  • Taste and adjust seasonings at the end
