Ingredients
  

  • Carrots – 1 pound peeled and chopped
  • Yellow onion – 1 medium chopped
  • Fresh ginger – 2 tablespoons peeled and chopped
  • Garlic – 2 cloves minced
  • Vegetable broth – 4 cups
  • Olive oil – 2 tablespoons
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Heavy cream – ¼ cup optional, for creamier soup

Instructions
 

Prepare the Vegetables

  • Peel and chop carrots, onion and ginger. Mince garlic. Keeping vegetables uniform ensures even cooking and a smooth soup.

Sauté Onion and Garlic

  • Heat olive oil in a large saucepan. Add onions and garlic. Sauté for five minutes until soft and fragrant, stirring often.

Add Carrots and Ginger

  • Add chopped carrots and ginger to the pan. Stir well. Cook for two more minutes to release flavors.

Add Broth

  • Pour in vegetable broth. Stir, then bring the mixture to a boil. Reduce heat to simmer for about 20 minutes until carrots are tender.

Blend the Soup

  • Use an immersion blender or regular blender to puree the soup. Blend until smooth and creamy. Be careful with hot liquid.

Add Cream (Optional)

  • Return soup to saucepan if using regular blender. Stir in heavy cream for extra richness. Taste and adjust salt and pepper.

Serve Warm

  • Ladle soup into bowls. Garnish with a drizzle of olive oil or fresh herbs if desired. Serve immediately for best flavor.
