Ingredients

  • 1 cup all-purpose flour
  • 4 ounces blue cheese crumbled
  • ½ cup unsalted butter softened
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves optional

Instructions

Prepare the Dough

  • Place softened butter in a mixing bowl. Add blue cheese, flour, salt, pepper and thyme. Use a mixer or spoon to combine everything. Mix until the dough becomes soft and slightly crumbly.

Shape the Dough Log

  • Place the dough on a clean surface. Roll it gently into a log shape about two inches wide. Wrap the dough log tightly in plastic wrap. Refrigerate for at least one hour.

Preheat the Oven

  • Preheat your oven to 375°F. Line a baking sheet with parchment paper. This prevents sticking and helps the crackers bake evenly.

Slice the Dough

  • Remove the chilled dough from the refrigerator. Use a sharp knife to cut thin slices. Each slice should be about ¼ inch thick for crisp crackers.

Arrange the Crackers

  • Place the slices on the prepared baking sheet. Leave small spaces between each cracker. They spread slightly while baking.

Bake the Crackers

  • Place the baking sheet in the oven. Bake for about 12–15 minutes. The crackers should turn golden around the edges and smell buttery.

Cool the Crackers

  • Remove the baking sheet from the oven. Let the crackers cool on a rack for a few minutes. Cooling helps them become crisp.

Serve and Enjoy

  • Transfer the crackers to a serving plate. Enjoy them warm or at room temperature. They taste amazing with cheese boards, soups, or dips.

Notes

  • Use good quality blue cheese for stronger flavor.
  • Chill the dough well before slicing.
  • Cut thin slices for crisp crackers.
  • Use parchment paper for even baking.
  • Do not overbake or the crackers may become too hard.
