  • ½ teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • 1 cup diced cooked ham or turkey optional
  • Fresh parsley for garnish

Instructions
 

Rinse the peas

  • Rinse dried peas under cool water. Remove any stones or broken pieces. Clean peas help get smooth texture and pleasant taste.

Sauté vegetables

  • Heat olive oil in a large pot. Add onion, carrot and celery. Cook until soft and fragrant, stirring gently without burning anything.

Add garlic to pot

  • Add minced garlic to vegetables. Cook for one minute. Garlic burns fast, so stir constantly to keep flavors sweet and mild.

Add peas and broth

  • Add rinsed black eyed peas into pot. Pour in broth. Make sure peas are fully covered with liquid for even cooking.

Add seasonings

  • Add bay leaf, thyme, smoked paprika, salt and pepper. Stir gently. These spices give deep warm flavor without making recipe hard.

Simmer slowly

  • Bring pot to a gentle boil. Then lower heat and simmer. Let peas cook slowly until tender and creamy inside each bean.

Add meat if using

Check tenderness
