Ingredients
  

  • 2 –3 lb beef tenderloin trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons fresh rosemary chopped
  • 2 teaspoons fresh thyme chopped
  • 4 garlic cloves minced
  • 2 tablespoons Dijon mustard
  • 2 tablespoons unsalted butter

Instructions
 

Preheat Oven

  • Preheat your oven to 425°F (220°C). Prepare a roasting pan and set aside. This ensures even cooking.

Season the Beef

  • Pat the beef dry with paper towels. Rub with olive oil, salt, black pepper, rosemary and thyme. Press herbs gently to adhere.

Sear the Beef

  • Heat a skillet over medium-high heat. Sear beef on all sides until browned. This locks in flavor and juices for tender meat.

Apply Garlic and Mustard

  • Mix minced garlic with Dijon mustard. Brush over the beef. This adds aroma and extra layer of delicious flavor.

Roast in Oven
