Ingredients
  

  • 2 pounds ground beef
  • 1 large onion diced
  • 1 green bell pepper diced
  • 4 cloves garlic minced
  • 2 cans diced tomatoes 14 oz each
  • 1 can tomato sauce 15 oz
  • 1 can kidney beans 15 oz, drained
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • ½ teaspoon cayenne pepper optional
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions
 

Prepare the Vegetables

  • Dice onion and bell pepper. Mince garlic. Set aside on a plate.

Heat the Pot

  • Add olive oil to a large pot. Heat over medium flame.

Cook Onions and Peppers

  • Add onions and bell peppers. Sauté for 5 minutes until soft.

Add Garlic

  • Add minced garlic. Cook 1–2 minutes. Smells amazing.

Brown the Beef

  • Add ground beef. Cook until fully brown. Break lumps with spoon.

Season the Meat

  • Add chili powder, paprika, cumin, cayenne, salt and pepper. Mix well.

Add Tomatoes

  • Pour diced tomatoes and tomato sauce into the pot. Stir.

Add Beans

  • Add drained kidney beans. Mix to combine all ingredients.

Simmer the Chili

  • Reduce heat to low. Cover pot. Let chili simmer for 45 minutes.

Check Taste

  • Taste the chili. Adjust salt and pepper if needed.

Serve

  • Garnish with fresh parsley. Serve hot with bread or rice.
