Ingredients
  

  • 3 pounds beef chuck cut into 2-inch cubes
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 4 ounces bacon chopped
  • 2 tablespoons tomato paste
  • 2 cups red wine Burgundy or Pinot Noir
  • 2 cups beef broth
  • 1 large onion chopped
  • 3 carrots sliced
  • 2 cloves garlic minced
  • 2 teaspoons fresh thyme leaves
  • 2 bay leaves
  • 1 pound small mushrooms halved
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh parsley for garnish

Instructions
 

Season and sear beef

  • Season beef with salt and pepper. Heat olive oil in Dutch oven. Sear beef in batches until browned all over.

Cook bacon

  • Add chopped bacon to pot. Cook until crispy. Remove bacon and set aside. This adds smoky flavor to the stew.

Cook vegetables

  • Add onions, carrots and garlic. Sauté until soft. Stir in tomato paste and cook for another 1-2 minutes for deeper flavor.

Deglaze with wine

  • Pour in red wine and scrape bottom of pot. This lifts all brown bits for rich, complex sauce flavor.

Add broth and herbs

  • Return beef and bacon to pot. Add beef broth, thyme, and bay leaves. Bring to a simmer. Cover and cook slowly.

Braise until tender

  • Cook in oven or on stovetop for 2 to 2.5 hours. Beef should be fork-tender and sauce thickened nicely.

Prepare mushrooms

  • Sauté mushrooms in butter until golden. Add them to the pot in the last 20 minutes of cooking.

Finish and serve

  • Remove bay leaves. Taste and adjust seasoning. Garnish with fresh parsley. Serve warm with mashed potatoes or crusty bread.
