Ingredients

  • 1 can 14.5 oz diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika optional
  • Salt and black pepper to taste
  • 1 tablespoon fresh lime juice
  • Optional: chopped cilantro or parsley for garnish

Instructions
 

Heat Oil in Pot

  • Add olive oil to a large soup pot over medium heat. Let it warm for 1–2 minutes.

Cook Onion and Garlic

  • Add chopped onion and minced garlic. Sauté 3–4 minutes until onion becomes soft and fragrant.

Add Carrots and Celery

  • Stir in chopped carrots and celery. Cook 5 minutes until slightly tender while stirring occasionally.

Add Spices

  • Add cumin, smoked paprika, salt and pepper. Stir to coat vegetables evenly with spices.

Add Beans and Tomatoes

  • Pour in black beans and diced tomatoes with their juice. Stir until mixed with vegetables and spices.

Add Broth

  • Pour in 4 cups of broth. Stir gently and bring soup to a gentle boil.

Simmer Soup

  • Reduce heat to low. Cover and simmer 20 minutes until vegetables are tender and flavors combine.

Blend for Creaminess (Optional)

  • Use an immersion blender or transfer half the soup to a blender. Blend until smooth for a creamy texture.

Add Lime Juice

  • Stir in fresh lime juice to brighten the flavors. Taste and adjust seasoning if needed.
