Ingredients
  

  • 3 pounds beef roast top sirloin or tenderloin
  • ½ cup balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon fresh rosemary chopped

Instructions
 

Preheat the Oven

  • Preheat your oven to 375°F. Prepare a roasting pan. Pat the beef dry with paper towels before seasoning.

Prepare the Marinade

  • In a bowl, mix balsamic vinegar, olive oil, garlic, Dijon mustard, honey, salt, pepper and rosemary. Whisk until smooth and blended.

Season the Beef

  • Place the beef in the roasting pan. Pour the marinade over it. Rub gently to coat all sides evenly.

Let It Rest

  • Let the beef sit with marinade for 15 minutes. This helps the flavors soak into the meat.

Roast the Beef

  • Place the roasting pan in the oven. Roast for about 1 hour or until desired doneness. Baste once during cooking.

Check Temperature

  • Use a meat thermometer. For medium-rare, internal temperature should be 135°F. Adjust cooking time if needed.

Rest Before Slicing

  • Remove beef from oven. Cover loosely with foil. Let it rest for 10 to 15 minutes. This keeps it juicy.

Slice and Serve

  • Slice the beef thinly against the grain. Spoon extra balsamic juices over slices before serving.
