Ingredients
  

  • 2 cups fresh corn kernels about 3 ears of corn
  • 2 ripe avocados diced
  • 1 cup cherry tomatoes halved
  • ¼ cup red onion finely chopped
  • 2 tablespoons fresh cilantro chopped
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

Cook the Corn

  • Bring a small pot of water to a boil. Add the corn kernels and cook for about three minutes. Drain the corn and let it cool completely before adding it to the salad.

Prepare the Vegetables

  • Dice the avocados into small cubes. Slice the cherry tomatoes in half. Finely chop the red onion. Chop the fresh cilantro and parsley. Place all these ingredients in a large bowl.

Make the Dressing

  • In a small bowl, mix olive oil and fresh lime juice. Add salt and black pepper. Stir well until the dressing looks smooth and combined.

Combine the Ingredients
