Ingredients
  

  • 2 cans 14 oz artichoke hearts, drained
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion thinly sliced
  • 1/2 cup black olives sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped

For the Dressing

  • 1/3 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 garlic clove minced
  • Salt and black pepper to taste

Instructions
 

Prepare the Artichokes

  • Drain the artichoke hearts well. Cut them into bite-sized pieces.

Chop the Vegetables

  • Slice tomatoes, cucumber, onion and olives. Add them to a bowl.

Make the Dressing

  • In a small bowl, whisk mayonnaise, lemon juice and mustard.

Add Garlic and Seasoning

  • Add minced garlic, salt and pepper. Whisk until smooth and creamy.

Combine Salad Ingredients

  • Add artichokes and vegetables to a large bowl. Mix gently.

Pour Dressing Over Salad

  • Pour the dressing on top. Toss until everything is coated.

Add Feta and Parsley

  • Sprinkle feta and parsley on top. Toss lightly once more.

Chill Before Serving

  • Refrigerate for 10 minutes. This helps the flavors blend.
