Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup melted butter
  • 1 tsp vanilla extract
  • 2 cups peeled and chopped apples
  • 1/2 cup chopped walnuts optional
  • 1 tbsp cinnamon sugar for topping

Instructions
 

Preheat the oven

  • Preheat your oven to 375°F. Line a muffin tin with paper liners.

Mix dry ingredients

  • In a bowl, combine flour, sugar, baking powder and cinnamon. Stir well.

Mix wet ingredients

  • In another bowl, whisk eggs, milk, melted butter and vanilla extract.

Combine wet and dry

  • Pour wet ingredients into dry ingredients. Mix until just combined.

Add apples

  • Fold in chopped apples gently. Add walnuts if you like.

Fill the muffin cups

  • Spoon batter into muffin cups. Fill them about three-quarters full.

Add cinnamon sugar topping

  • Sprinkle cinnamon sugar on top of each muffin.

Bake the muffins

  • Bake for 18–20 minutes. The tops should be golden brown.

Check doneness

  • Insert a toothpick in the center. It should come out clean.

Cool and enjoy

  • Let muffins cool on a rack. Serve warm or at room temperature.
