Ingredients

  • Unsalted butter – ½ cup
  • Heavy cream – 1½ cups
  • Garlic minced – 2 cloves
  • Parmesan cheese freshly grated – 1½ cups
  • Salt – ½ teaspoon
  • Black pepper – ½ teaspoon
  • Nutmeg – a small pinch
  • Fresh parsley chopped – 1 tablespoon

Instructions

Melt the Butter

  • Place a saucepan over medium heat. Add butter. Let it melt slowly. Do not brown it. Stir gently for smooth texture.

Add Garlic

  • Add minced garlic to melted butter. Cook for one minute. Stir constantly. Garlic should smell fragrant but not turn brown.

Pour in Cream

  • Slowly pour heavy cream into the pan. Stir gently. Let it warm for three to four minutes. Do not let it boil.

Season the Cream

  • Add salt, black pepper and nutmeg. Stir well. These spices balance the rich cream flavor nicely.

Simmer Gently

  • Lower heat slightly. Let sauce simmer for five minutes. Stir often. Sauce will thicken slowly and evenly.

Add Parmesan Cheese

  • Add grated Parmesan cheese in small amounts. Stir after each addition. Cheese should melt smoothly into the sauce.

Adjust Thickness

  • If sauce feels too thick, add a splash of cream. If thin, simmer one more minute while stirring gently.

Finish with Herbs

  • Turn off heat. Add chopped parsley. Stir once. Sauce is now ready to serve over pasta or vegetables.

Notes

  • Use fresh Parmesan, not pre-shredded cheese.
  • Keep heat medium to low to avoid separation.
  • Stir often for smooth texture.
  • Add cheese slowly for better melting.
  • Serve immediately for best flavor.
