Ingredients
  

  • 1 head romaine lettuce chopped
  • 1 cup baby spinach
  • 1/2 cup beets cooked and diced
  • 1/2 cup chopped boiled eggs
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup green onions chopped
  • 1/2 cup croutons
  • 1/4 cup Parmesan cheese grated

For the Dressing:

  • 1/2 cup mayonnaise
  • 1/4 cup red wine vinegar
  • 2 tbsp Worcestershire sauce
  • 1 tsp sugar
  • 1 tsp dry mustard
  • Salt and pepper

Instructions
 

Wash the greens

  • Wash the lettuce and spinach under cold water. Dry well.

Chop vegetables

  • Cut lettuce into small pieces. Dice beets. Slice tomatoes. Chop onions.

Make the dressing

  • Mix mayonnaise, vinegar, Worcestershire sauce, sugar, mustard, salt, and pepper. Stir until creamy.

Mix salad

  • Put lettuce, spinach, tomatoes, beets, eggs, and onions in a big bowl.

Add dressing

  • Pour dressing on the salad. Toss gently with tongs.

Add toppings

  • Sprinkle croutons and Parmesan. Mix lightly.

Serve fresh

  • Serve right away. It tastes best when fresh and crisp.

  • Use crisp lettuce for crunch.
  • Chill the bowl before mixing.
  • Add more vinegar if you like tangy taste.
