Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound chicken breast cut in small cubes
  • 1 cup chopped carrots
  • 1 cup diced potatoes
  • 1 cup chopped celery
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • 4 cups chicken broth
  • 1 cup milk or cream
  • 1 cup corn kernels
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons flour
  • 2 tablespoons butter
  • Fresh parsley for garnish optional

Instructions
 

Cook the Chicken

  • Heat olive oil in a big pot. Add chicken cubes. Cook until white and light golden. Take out and keep aside.

Sauté the Vegetables

  • Add butter to the same pot. Add onions, garlic, carrots, and celery. Cook for 5 minutes until soft and nice-smelling.

Add Potatoes and Broth

  • Add diced potatoes and pour in the chicken broth. Stir well. Let it boil for a few minutes.

Add Seasoning

  • Add salt, pepper, and thyme. Stir well. Let the soup simmer for 10 minutes until potatoes are soft.

Thicken the Soup

  • Mix flour with some milk in a small bowl. Pour this into the soup slowly while stirring. It will make the soup creamy and thick.

Add Chicken and Corn

  • Add cooked chicken and corn to the pot. Pour in the rest of the milk or cream. Stir everything and let it cook for 10 minutes.

Taste and Serve

  • Taste the soup and adjust seasoning if needed. Sprinkle parsley on top. Serve hot and enjoy.
