Ingredients
  

  • 2 medium cucumbers
  • 1 teaspoon salt
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon chili flakes adjust to taste
  • 1 garlic clove minced
  • 1 teaspoon toasted sesame seeds
  • 1 green onion chopped

Instructions
 

Prepare the cucumbers

  • Wash cucumbers and cut into bite-sized pieces. Sprinkle salt and let sit 5 minutes. Drain extra water.

Make the spicy sauce

  • In a small bowl, mix sesame oil, soy sauce, rice vinegar, sugar, chili flakes, and minced garlic. Stir well.

Combine cucumbers and sauce

  • Put cucumbers in a bowl. Pour sauce over cucumbers. Toss gently to coat.

Add garnish

  • Sprinkle chopped green onions and toasted sesame seeds on top. Mix lightly.

Serve immediately
