Ingredients

For the pudding:

  • 1 cup chopped dates
  • 1 cup boiling water
  • 1 teaspoon baking soda
  • ½ cup unsalted butter
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract

For the toffee sauce:

  • 1 cup heavy cream
  • ½ cup brown sugar
  • 4 tablespoons butter
  • 1 teaspoon vanilla extract

Instructions

Soak the Dates

  • Place chopped dates in a bowl. Pour boiling water over them. Add baking soda. Let it sit for 10 minutes. This makes the dates soft and sweet.

Prepare the Batter

  • In another bowl, mix butter and brown sugar. Beat until creamy. Add eggs and vanilla. Mix well until smooth and fluffy.

Add Dry Ingredients

  • Add flour and baking powder slowly. Mix gently. Do not overmix. This keeps the pudding light and soft after baking.

Combine with Dates

  • Add soaked dates and water mixture into batter. Stir gently. The batter will be soft and slightly runny. This is normal for sticky pudding.

Preheat Oven

  • Set oven to 350°F (175°C). Grease a baking dish lightly. This prevents sticking and helps even baking.

Bake the Pudding

  • Pour batter into baking dish. Bake for 30–35 minutes. The top should be golden brown. Insert a toothpick to check doneness.

Make Toffee Sauce

  • In a saucepan, melt butter with brown sugar. Add cream and stir slowly. Cook until thick and smooth. Add vanilla at the end.

Serve Warm

  • Pour warm toffee sauce over pudding. Serve immediately for best taste. The sauce will soak into the soft cake.

Notes

    • Use soft, good-quality pitted dates.
    • Chop the dates before soaking them.
    • Do not skip the baking soda.
    • Use room-temperature butter.
    • Measure flour accurately.
    • Avoid overmixing the batter.
    • Do not overbake the sponge.
    • Keep the toffee sauce warm.
    • Add sauce while the sponge is warm.
    • Use a pinch of salt for balance.
    • Serve with vanilla ice cream.
    • Toast nuts before adding them.
    • Let the sponge absorb some sauce before serving.
