Ingredients

  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract

For the toffee sauce:

  • 1 cup heavy cream
  • ½ cup brown sugar
  • 4 tablespoons butter
  • 1 teaspoon vanilla extract

Instructions
 

Soak the Dates

  • Place chopped dates in a bowl. Pour boiling water over them. Add baking soda. Let it sit for 10 minutes. This makes the dates soft and sweet.

Prepare the Batter

  • In another bowl, mix butter and brown sugar. Beat until creamy. Add eggs and vanilla. Mix well until smooth and fluffy.

Add Dry Ingredients

  • Add flour and baking powder slowly. Mix gently. Do not overmix. This keeps the pudding light and soft after baking.

Combine with Dates

  • Add soaked dates and water mixture into batter. Stir gently. The batter will be soft and slightly runny. This is normal for sticky pudding.

Preheat Oven

  • Set oven to 350°F (175°C). Grease a baking dish lightly. This prevents sticking and helps even baking.

Bake the Pudding
