Ingredients
  

  • 2.5 pounds beef short ribs
  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 4 garlic cloves minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions
 

Season the Short Ribs

  • Pat the short ribs dry using paper towels. Sprinkle salt and black pepper evenly on all sides for strong and balanced flavor.

Sear the Meat

  • Heat olive oil in a large pot. Sear short ribs on all sides until they become brown and develop a deep crust.

Remove the Ribs

  • Take the browned short ribs out of the pot. Place them on a plate and keep them aside while preparing the sauce base.

Cook the Vegetables

  • Add onions, carrots and celery into the same pot. Cook for a few minutes until they become soft and slightly golden in color.

Add Garlic and Tomato Paste

  • Stir in garlic and tomato paste. Cook for one minute to remove raw taste and build rich flavor for the sauce base.

Pour Wine and Broth

  • Add red wine and beef broth into the pot. Stir well while scraping the bottom to lift all flavor bits.

Add Herbs and Return Ribs

  • Add thyme and bay leaves into the pot. Place the short ribs back into the sauce so they are fully covered.

Slow Cook in Oven

  • Cover the pot and place it in the oven. Cook at low heat for about three hours until meat becomes very tender.

Rest and Serve

  • Remove the pot from the oven carefully. Let the ribs rest for a few minutes before serving with rich sauce on top.
