Ingredients
  

  • 1 medium eggplant sliced thin
  • 1 zucchini sliced thin
  • 1 yellow squash sliced thin
  • 1 red bell pepper sliced thin
  • 1 yellow bell pepper sliced thin
  • 2 medium tomatoes sliced thin
  • 3 tablespoons olive oil
  • 2 garlic cloves chopped
  • 1 small onion chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon basil or oregano
  • ½ cup tomato sauce

Instructions
 

Prepare the Vegetables

  • Wash all the vegetables. Slice the eggplant, zucchini, squash, tomatoes, and bell peppers into thin, even rounds. This helps them cook evenly and look nice when arranged.

Cook the Onion and Garlic

  • Heat 1 tablespoon olive oil in a pan. Add chopped onion and garlic. Cook for 2–3 minutes until soft and fragrant. Add a little salt and pepper. This will be the base flavor for your ratatouille.

Add Tomato Sauce

  • Pour in the tomato sauce to the pan. Add thyme and basil. Stir well and let it simmer for 5 minutes. This sauce will give the dish a rich taste. Spread this sauce at the bottom of a baking dish.

Arrange the Vegetables

  • Now start layering the vegetables. Place a slice of eggplant, then zucchini, yellow squash, tomato, and bell pepper. Repeat this pattern until the dish is full. It should look like colorful rings or a rainbow.

Add Olive Oil and Seasoning

  • Drizzle the top with olive oil. Sprinkle a pinch of salt, pepper, and herbs. This makes the vegetables shine and adds flavor.

Bake the Ratatouille

  • Preheat your oven to 375°F (190°C). Cover the baking dish with foil. Bake for 30 minutes. Then remove the foil and bake for 10 more minutes to let the top brown slightly.

Serve Warm

  • Take it out carefully and let it cool for a few minutes. Serve warm with bread, rice, or pasta. It’s colorful, soft, and delicious.
