Ingredients

  • 2 cups sliced radishes
  • 1 small cucumber thinly sliced
  • ½ small red onion thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon chopped parsley

Instructions

Slice the radishes

  • Wash radishes well. Slice them thin so they stay crisp and soak flavor easily.

Cut the cucumber

  • Slice the cucumber thin. Keep the slices even so the salad mixes well together.

Slice the onion

  • Cut the red onion into fine thin slices. They add sharp flavor and pretty color to the salad.

Make the dressing

  • Mix olive oil, lemon juice, honey, salt and black pepper in a small bowl until smooth.

Add vegetables

  • Place radishes, cucumber and onion in a large bowl. Mix them gently with your hands.

Add dressing

  • Pour the dressing over the vegetables. Make sure all pieces get a light coat.

Add parsley

  • Add chopped parsley for fresh taste. Stir lightly so herbs spread evenly across the bowl.

Taste and adjust

  • Taste the salad. Add more lemon or pepper if you want stronger flavor.

Let it rest

  • Let the salad sit for a few minutes. This helps the dressing soak into the veggies.

Serve fresh

  • Serve the salad right away. Fresh crunch gives the best taste and texture.

Notes

  • Use very fresh radishes
  • Slice vegetables thin for best crunch
  • Use fresh lemon juice for bright flavor
  • Do not skip the honey
  • Add herbs for more color and taste
