Ingredients
  

  • 2 tablespoons butter
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup beef stock
  • ½ cup Madeira wine
  • 1 teaspoon soy sauce
  • 1 teaspoon tomato paste
  • 1 teaspoon fresh thyme or dried thyme
  • 1 teaspoon cornstarch optional for thickening
  • Salt to taste
  • Black pepper to taste

Instructions
 

Heat the Pan

  • Place a saucepan on medium heat. Add butter and let it melt slowly. Do not burn it. This forms the base of the sauce.

Cook the Onion

  • Add finely chopped onion to the pan. Cook until soft and slightly golden. Stir often so it does not burn or stick.

Add Garlic

  • Add minced garlic and cook for one minute. Stir quickly to release flavor. Be careful not to overcook garlic or it will turn bitter.

Add Tomato Paste

  • Mix in tomato paste and stir well. Let it cook for one minute. This adds color and depth to the sauce.

Pour Madeira Wine

  • Add Madeira wine slowly into the pan. Stir gently and let it simmer. This step gives the sauce its rich and slightly sweet flavor.

Add Stock and Herbs

  • Pour in beef stock and add thyme. Stir well and bring to a gentle boil. Let it simmer for 10–12 minutes to reduce slightly.

Season the Sauce

  • Add soy sauce, salt and black pepper. Taste and adjust seasoning if needed. This balances the flavor and makes it more savory.

Thicken the Sauce

  • If you want a thicker sauce, mix cornstarch with water. Add it slowly while stirring. Cook for 2–3 more minutes until smooth and glossy.

Strain and Serve

  • Optional: strain the sauce for a smooth texture. Pour into a serving bowl and serve warm with steak or roasted meat.
