Ingredients
  

  • 2 cups cooked chicken breast shredded
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 celery stalk finely chopped
  • ½ red onion finely chopped
  • 1 small cucumber diced
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh parsley chopped
  • 1 small apple optional, diced

Instructions
 

Cook the Chicken

  • Place chicken in a pot of boiling water or pan. Cook until fully done and tender. Let it cool slightly. Then shred it into small pieces using forks or hands.

Prepare the Vegetables

  • Wash all vegetables carefully under clean water. Chop celery, onion, cucumber and apple into small pieces. Keep them fresh and crisp for best texture.

Make the Dressing

  • Take a mixing bowl. Add mayonnaise, Greek yogurt and Dijon mustard. Mix until smooth and creamy. This creates a light and tasty base for the salad.

Add Seasoning

  • Add lemon juice, salt and black pepper. Stir well. This gives the dressing a fresh and slightly tangy flavor that balances the creaminess.

Combine Chicken and Vegetables

  • Add shredded chicken into a large bowl. Then add all chopped vegetables. Mix gently so everything is evenly spread and well combined.
