Ingredients
  

  • 10 oz spaghetti
  • 4 oz pancetta or bacon chopped
  • 2 eggs
  • 1 egg yolk
  • 1 cup grated Parmesan or Pecorino
  • 1 tsp black pepper
  • 1/2 tsp salt

Instructions
 

Cook the pasta

  • Boil spaghetti in salted water until tender. Keep one cup of pasta water aside for the sauce.

Cook the pancetta

  • Fry pancetta until crisp. Let the fat melt and coat the pan. Keep heat medium.

Mix eggs and cheese

  • Whisk eggs, yolk, cheese and pepper in a bowl. Make a thick and creamy mixture.

Add pasta to pan

  • Place cooked pasta in the pan. Toss well to coat with the warm pancetta fat.

Remove from heat

  • Turn off the heat before adding eggs. This prevents eggs from scrambling in the pan.

Add egg mixture

  • Pour the egg mixture over pasta. Toss fast to form creamy sauce with pasta heat.

Add pasta water

  • Splash warm pasta water. Mix until the sauce becomes silky and smooth on pasta.

Taste and adjust

  • Taste the pasta. Add more cheese or pepper if needed. Keep the texture creamy.

  • Do not cook the eggs directly on heat.
