The Foolproof Yorkshire Pudding Recipe is light, crispy and so delicious. These golden puffs rise high in the oven and feel magical.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup milk
  • 3 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons beef drippings or vegetable oil

Instructions
 

Preheat the Oven

  • Place muffin tin in the oven with oil inside each cup. Preheat oven to 425°F (220°C) until the oil is very hot.

Make the Batter

  • Whisk eggs, milk, flour, salt and pepper until smooth. Remove all lumps carefully for perfect rise and texture.

Rest the Batter

  • Let the batter rest for twenty minutes. Resting helps gluten relax and produces higher puff when baked.

Heat the Fat

  • Make sure the oil or drippings are smoking hot. Hot fat is key for crisp, tall Yorkshire puddings.

Pour the Batter

  • Carefully pour batter into hot tin cups. Work fast so heat stays inside and puddings rise beautifully.

Bake Without Opening

  • Bake until golden and puffed. Do not open the oven door during baking because heat loss stops rising instantly.

Remove and Serve

  • Take puddings from oven and place on rack. Serve hot with gravy, roast meat, or butter immediately.
