Ingredients
  

  • 6 pieces of chicken legs, thighs, or breasts
  • 2 cups all-purpose flour
  • 1 cup buttermilk
  • 2 eggs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon cayenne pepper optional
  • 3 cups oil for frying

Instructions
 

Prepare the Chicken

  • Wash the chicken pieces and dry them with a towel. You can use pieces with or without bones. Make sure they are fully dry before coating.

Season the Flour

  • Mix flour, salt, pepper, paprika, garlic powder, onion powder, and cayenne in a bowl. This makes your crust tasty and crispy.

Make the Wet Mix

  • In another bowl, whisk buttermilk and eggs. This helps the flour stick and keeps the inside soft.

Coat the Chicken

  • Dip each chicken piece in the flour, then the buttermilk mix, and again in the flour. Press a little so the flour sticks well. Put coated chicken on a plate.

Heat the Oil

  • Pour oil into a deep pan or fryer. Heat it to 350°F (175°C). To test, drop a small bread piece—it should sizzle right away.

Fry the Chicken

  • Place chicken pieces gently in the hot oil. Do not crowd the pan. Fry each piece for about 10–12 minutes per side. Turn once so both sides are golden.

Drain the Chicken

  • When done, take out the chicken. Put it on a paper towel or wire rack to remove extra oil.

Serve and Enjoy

  • Let it cool for a few minutes. The crust will stay crispy, and the meat will be juicy. Enjoy it hot with your favorite sides.
