Ingredients
  

Macaron Shells:

  • 1 cup almond flour
  • 1 cup powdered sugar
  • 2 egg whites
  • 1/4 cup white sugar
  • 1/4 tsp salt
  • 1/4 tsp vanilla

Salted Caramel Filling:

  • 1/2 cup sugar
  • 3 tbsp butter
  • 1/4 cup heavy cream
  • 1/4 tsp salt

Instructions
 

Sift the dry mix

  • Sift almond flour and powdered sugar. Remove all lumps for smooth macaron shells.

Beat the egg whites

  • Beat whites until foamy. Add sugar slowly. Whip until stiff peaks form.

Fold the batter

  • Fold dry mix into egg whites. Mix slow until the batter flows like lava.

Pipe the shells

  • Pour batter into a piping bag. Pipe small circles on parchment-lined trays.

Rest the shells

  • Let the shells sit for 25 minutes. The tops should feel dry when touched.

Bake the shells

  • Bake at 300°F for 15 minutes. Let them cool before touching.

Make the caramel

  • Melt sugar in a pan. Add butter and cream. Mix until smooth and thick.

Add the salt

  • Stir salt into warm caramel. Let it cool so it gets thicker.

Fill the macarons

  • Pipe caramel on half the shells. Press with the other shells gently.

Chill the cookies

  • Place macarons in the fridge. Rest them for a few hours for best taste.
