Ingredients
  

  • 1 pre-baked pie crust
  • 1 cup brown sugar
  • ¼ cup butter
  • 3 tbsp cornstarch
  • 2 cups milk
  • 3 egg yolks
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
 

Heat the Butter

  • Melt butter in a saucepan. Keep the heat low so the butter does not burn quickly.

Add Brown Sugar

  • Add brown sugar to the butter. Stir until it melts fully and turns smooth and glossy.

Mix Cornstarch and Milk

  • In a bowl, mix cornstarch with a little milk. Stir until no lumps remain inside.

Add Milk to the Pan

  • Pour the rest of the milk into the sugar mix. Keep stirring to avoid burning at the bottom.

Add Cornstarch Mix

  • Add the cornstarch mixture slowly. Stir well until the mixture becomes thick and creamy.

Temper the Egg Yolks

  • Add some warm mixture to the egg yolks. Stir to warm them without cooking them too fast.

Add Yolks Back

  • Pour the warm yolk mix back into the pan. Stir nonstop until the filling becomes smooth.

Add Vanilla

  • Remove the pan from heat. Add vanilla and stir. The filling will smell sweet and warm.

Fill the Pie Crust

  • Pour the butterscotch filling into the pie crust. Spread evenly with a spatula for smoothness.

Chill the Pie

  • Place the pie in the fridge. Chill for three hours until firm and ready to slice.
