Ingredients
  

  • Cooked quinoa – 2 cups
  • Carrot – 1 medium grated
  • Zucchini – 1 small grated
  • Onion – ½ cup finely chopped
  • Garlic – 2 cloves minced
  • Breadcrumbs – ½ cup
  • Eggs – 2 large
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Paprika – 1 teaspoon
  • Olive oil – 2 tablespoons

Instructions
 

Prepare the Vegetables

  • Grate carrot and zucchini. Chop onion finely. Remove extra water from zucchini using hands.

Mix Quinoa and Veggies

  • Add quinoa and vegetables to a bowl. Mix gently using a spoon.

Add Eggs and Seasoning

  • Crack eggs into bowl. Add salt, pepper, paprika and garlic. Mix well.

Add Breadcrumbs

  • Add breadcrumbs slowly. Stir until mixture feels thick and holds together.

Shape the Patties

  • Take small portions. Shape into flat patties using clean hands.

Heat the Pan

  • Heat olive oil in a pan over medium heat until hot.

Cook First Side

  • Place patties in pan. Cook for four minutes until golden and crisp.

Flip Carefully

  • Flip patties gently. Cook other side four minutes until fully cooked.

Drain Excess Oil

  • Remove patties from pan. Place on paper towel to remove extra oil.

Serve Warm

  • Serve patties warm with sauce or salad for best taste.

Notes

  • Use well cooked quinoa
  • Remove water from veggies
  • Do not overcrowd pan
  • Cook on medium heat
  • Let patties set before flipping
