Ingredients
  

  • 4 chicken breasts thin sliced
  • 1/2 cup flour
  • 3 tbsp olive oil
  • 3 tbsp butter
  • 1/3 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 1/4 cup capers drained
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley chopped

Instructions
 

Prepare the chicken

  • Pound the chicken to make it even. Add salt and pepper.

Dredge in flour

  • Coat chicken in flour. Shake off extra flour.

Cook the chicken

  • Heat oil in a skillet. Cook chicken until golden. Remove it.

Make the sauce

  • Add butter and lemon juice to skillet. Stir well. Add broth and capers. Let it cook a few minutes.

Combine chicken and sauce

  • Put chicken back in skillet. Coat with sauce.

Garnish and serve

  • Top with parsley. Serve hot with pasta or rice.

Notes

  • Always use fresh lemon juice.
  • Do not overcook chicken.
  • Thin chicken cooks faster.
  • Use unsalted butter for better taste.
  • Add parsley for color and flavor.
