  • 4 cups green cabbage shredded
  • 2 cups red cabbage shredded
  • 1 cup carrots julienned
  • 1 red bell pepper thinly sliced
  • 4 green onions sliced
  • ½ cup cilantro chopped
  • ½ cup sliced almonds
  • ½ cup crispy chow mein noodles

For the Dressing

  • ¼ cup rice vinegar
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon fresh lime juice
  • 1 teaspoon grated ginger
  • 1 garlic clove minced

Instructions
 

Prepare the Vegetables

  • Wash all vegetables carefully. Shred the green cabbage and red cabbage. Slice the bell pepper into thin strips. Cut the green onions and chop the cilantro. Place everything into a large bowl.

Make the Dressing

  • In a small bowl, add rice vinegar, sesame oil, soy sauce, honey, lime juice, ginger and garlic. Whisk well until all ingredients combine smoothly and evenly.

Mix the Slaw

  • Pour the dressing over the prepared vegetables. Toss gently with salad tongs. Make sure the dressing coats every piece for balanced flavor and texture.

Add Crunchy Toppings

  • Add sliced almonds and chow mein noodles. Toss lightly again. These ingredients add extra crunch and make the slaw more enjoyable and satisfying.
