Ingredients

  • 1 pound elbow macaroni
  • 4 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded
  • ½ cup mozzarella cheese shredded
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder
  • 2 tablespoons grated Parmesan cheese

Instructions

Cook the Pasta

  • Bring a large pot of salted water to a boil. Add the macaroni and cook until tender. Drain the pasta well and set it aside for later use.

Melt the Butter

  • Place a saucepan over medium heat. Add the butter and let it melt completely. Stir gently to prevent browning and keep the flavor smooth.

Make the Roux

  • Add the flour to the melted butter. Whisk continuously for about one minute. This creates a smooth base that helps thicken the cheese sauce.

Add the Milk

  • Slowly pour in the milk while whisking constantly. Add the heavy cream and continue stirring. Cook until the mixture becomes smooth and slightly thick.

Season the Sauce

  • Add salt, black pepper, paprika and garlic powder. Stir well. These simple seasonings enhance the cheese flavor without overpowering the creamy texture.

Add the Cheese

  • Reduce the heat to low. Add cheddar, Monterey Jack, and mozzarella cheese. Stir until fully melted. The sauce should look creamy, rich, and silky.

Combine Pasta and Sauce

  • Add the cooked macaroni to the cheese sauce. Stir carefully until every piece of pasta is coated. Make sure the sauce spreads evenly.

Finish and Serve

  • Sprinkle Parmesan cheese over the mac and cheese. Serve immediately for the creamiest texture. You can also bake it for a golden top.

Notes

  • Use freshly shredded cheese for smoother melting.
  • Cook pasta until just tender.
  • Stir the sauce constantly while cooking.
  • Use whole milk for a richer texture.
  • Add cheese on low heat.
  • Taste and adjust seasoning before serving.
  • Serve immediately for the best creaminess.
  • Use quality cheddar cheese for stronger flavor.
