Ingredients
  

  • 1 lb chicken breast boneless
  • 1 tbsp olive oil
  • 1 onion sliced
  • 2 garlic cloves chopped
  • 1 can crushed tomatoes 15 oz
  • 2 chipotle peppers in adobo
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • Salt and pepper
  • 2 cups cooked white rice
  • 1 cup black beans
  • 1 avocado sliced
  • Fresh cilantro
  • Lime wedges

Instructions
 

Step 1:

  • Heat oil in pan. Cook chicken until brown. Remove and shred.

Step 2:

  • Add onion and garlic to pan. Cook until soft.

Step 3:

  • Add tomatoes, chipotle, paprika, cumin, salt, and pepper. Cook 8 minutes.

Step 4:

  • Add shredded chicken. Mix well and simmer.

Step 5:

  • Put rice in bowl. Add chicken on top.

Step 6:

  • Add beans, avocado, cilantro, and lime juice.

Notes

  • Use chicken thighs for more taste.
  • Add corn for crunch.
  • Try brown rice for fiber.
  • Change spice with more or less chipotle.
  • Add cheese for creamy flavor.
