Ingredients
  

  • 2 cups cooked chicken shredded
  • 4 cups chicken broth
  • 1 cup water
  • 1 cup carrots thinly sliced
  • 1 cup mushrooms sliced
  • 1 cup bok choy chopped
  • 1 cup snow peas
  • 2 garlic cloves minced
  • 1 small onion chopped
  • 2 tsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp ginger grated
  • 100 g egg noodles
  • Salt and pepper to taste
  • Spring onions for garnish

Instructions
 

Prepare the Vegetables

  • Wash and slice carrots, mushrooms, bok choy, and snow peas. Keep ready.

Cook the Garlic and Onion

  • Heat sesame oil in a pot. Add garlic and onion. Stir until soft.

Add Chicken Broth and Water

  • Pour broth and water into the pot. Bring to a gentle boil.

Add Carrots and Mushrooms

  • Add sliced carrots and mushrooms. Cook 5–7 minutes until soft.

Add Bok Choy and Snow Peas

  • Add bok choy and snow peas. Stir gently. Cook 2–3 minutes.

Add Soy Sauce and Ginger

  • Pour in soy sauce. Add grated ginger. Mix well.

Add Shredded Chicken

  • Add cooked shredded chicken. Heat through.

Cook the Noodles

  • Boil noodles in another pot. Cook as package says.

Combine Noodles and Soup

  • Drain noodles. Add to soup. Stir gently.

Season to Taste

  • Add salt and pepper. Taste and adjust.

Garnish and Serve

  • Sprinkle spring onions on top. Serve hot.

Notes

  • Fresh vegetables provide good taste.
  • Noodles should not be overcooked, they become soft.
  • At the end add chicken to make it tender.
  • Add before serving to add or remove salt or soy sauce.
  • Add some drops of sesame oil to add the additional flavor.
