Ingredients
  

Crust

  • 2 cups crushed graham crackers
  • ½ cup melted butter
  • 2 tbsp sugar

Filling

  • 3 packs cream cheese soft
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • ½ cup strawberry puree
  • Few drops pink food color optional

Topping

  • Fresh sliced strawberries
  • Whipped cream
  • Edible cherry blossom petals optional

Instructions
 

Step 1: Make the crust

  • Mix crackers, butter, and sugar.
  • Press in the pan base.
  • Bake for 10 minutes at 325°F.

Step 2: Make the filling

  • Beat cream cheese and sugar until smooth.
  • Add eggs one by one.
  • Mix gently.
  • Add sour cream and vanilla.
  • Mix in strawberry puree.
  • Add pink color if you want.

Step 3: Bake the cheesecake

  • Pour filling over crust.
  • Place pan in a baking sheet with water.
  • Bake 55 minutes at 325°F.
  • Turn oven off. Leave cheesecake inside.

Step 4: Cool and decorate

  • Cool cheesecake at room temperature.
  • Chill in the fridge for 4 hours.
  • Top with strawberries and whipped cream.
  • Add petals for decoration.

Notes

  • Use cream cheese at room temperature.
  • Do not mix the batter too much.
  • Bake in a water bath to stop cracks.
  • Chill overnight for better taste.
  • Slice with a warm knife.
