Ingredients
  

  • For the Dough:
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • For the Filling:
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon melted butter
  • For the Glaze:
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions
 

Prepare the Dough

  • In a bowl, whisk flour, baking powder and salt. In another bowl, beat butter and sugars until fluffy. Add egg and vanilla. Slowly mix in dry ingredients.

Chill the Dough

  • Wrap the dough in plastic wrap. Place in the fridge for 20 minutes. This helps the dough become firm and easy to roll.

Make the Filling

  • In a small bowl, mix brown sugar, cinnamon and melted butter. Stir until it forms a thick paste. Set aside.

Roll and Cut the Dough

  • Preheat oven to 350°F (175°C). Roll dough on a floured surface. Cut into rectangles or circles. Place half on a lined baking sheet.

Add the Filling

  • Spoon a small amount of filling in the center of each cookie base. Leave space around the edges so filling does not spill.

Seal the Cookies

  • Place another piece of dough on top. Press edges gently with a fork to seal. This keeps the filling inside during baking.

Bake the Cookies

  • Bake at 350°F (175°C) for 10–12 minutes. The edges should turn light golden. Remove from oven and cool on a rack.

Add the Glaze

  • Mix powdered sugar, milk and vanilla until smooth. Spread glaze over cooled cookies. Let it set before serving.

  • Chill the dough before rolling.
