Ingredients
  

  • 2 lbs chicken pieces legs, thighs, wings, or breasts
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • Oil for frying vegetable or peanut oil

Optional for extra flavor:

  • 1 teaspoon white pepper
  • 1 teaspoon dried thyme
  • ½ teaspoon chili powder

Instructions
 

Marinate the Chicken

  • Place the chicken pieces in a bowl. Pour in the buttermilk until all are covered. Let it sit for at least 1 hour. For best results, keep it in the fridge overnight. This makes the chicken soft and juicy.

Prepare the Coating

  • In another bowl, mix the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, black pepper, and baking powder. Mix well. This mix gives your chicken its golden crust.

Coat the Chicken

  • Take the chicken from the buttermilk. Let extra liquid drip off. Roll each piece in the flour mix. Press it well so it sticks. Place them on a plate. Rest for 10 minutes before frying. This helps the coating stay on.

Heat the Oil

  • Pour oil into a deep pan. Heat to 350°F (175°C). Drop a little flour in the oil to test. If it sizzles, it’s ready.

Fry the Chicken

  • Place the chicken pieces carefully in hot oil. Don’t overcrowd the pan. Fry in small batches. Cook for 6–8 minutes on each side until golden brown.

Check for Doneness

  • The chicken should reach 165°F (75°C). If you don’t have a thermometer, cut one piece. The juices should be clear.

Drain and Serve
