Ingredients
  

  • Romaine lettuce – 3 cups chopped
  • Grilled chicken breast – 250g sliced
  • Cherry tomatoes – 1 cup halved
  • Red bell pepper – ½ cup sliced
  • Red onion – ¼ cup thinly sliced
  • Shredded cheddar cheese – ½ cup
  • Corn – ½ cup optional, cooked
  • Black beans – ½ cup cooked
  • Croutons – ½ cup
  • Wildfire dressing – ¼ cup or homemade, see notes
  • Salt – ½ tsp
  • Black pepper – ½ tsp

Wildfire Dressing Ingredients

  • Mayonnaise – 2 tbsp
  • Sour cream – 2 tbsp
  • Hot sauce – 1 tsp
  • Lime juice – 1 tsp
  • Honey – 1 tsp
  • Garlic powder – ½ tsp

Instructions
 

Prepare the Chicken

  • Season chicken breast with salt and pepper. Grill or pan-fry until fully cooked. Slice into thin strips. Set aside to cool slightly.

Wash and Chop Lettuce

  • Wash romaine lettuce thoroughly. Chop into bite-size pieces. Place in a large mixing bowl. This will be the base of your salad.

Prepare the Vegetables

  • Slice cherry tomatoes, red bell pepper, and red onion. Add them to the bowl with lettuce. These fresh vegetables give the salad crunch and color.

Mix the Dressing

  • In a small bowl, combine mayonnaise, sour cream, hot sauce, lime juice, honey, and garlic powder. Stir until smooth.

Assemble the Salad

  • Add grilled chicken, black beans, corn and shredded cheese to the lettuce and veggies. Pour the wildfire dressing evenly over the salad.

Toss the Salad

  • Gently toss all ingredients using salad tongs. Make sure chicken and vegetables are coated with dressing. Avoid overmixing to keep lettuce crisp.

Add Croutons
