Ingredients
  

Crust:

  • Graham crackers crushed – 1 1/2 cups
  • Unsalted butter melted – 1/4 cup
  • Sugar – 2 tablespoons

Filling:

  • Cream cheese softened – 24 oz
  • Granulated sugar – 3/4 cup
  • Eggs – 3 large
  • Vanilla extract – 1 teaspoon
  • Lavender buds – 1 teaspoon
  • Heavy cream – 1/2 cup

Topping:

  • Fresh blackberries – 1 cup
  • Sugar – 2 tablespoons
  • Lemon juice – 1 teaspoon

Instructions
 

Preheat Oven

  • Preheat oven to 325°F (165°C). Grease a 9-inch springform pan and set aside.

Prepare the Crust

  • Mix crushed graham crackers, melted butter and sugar. Press firmly into the pan bottom evenly.

Bake Crust

  • Bake crust for 10 minutes. Remove from oven and let it cool while preparing filling.

Mix Cream Cheese

  • In a bowl, beat cream cheese and sugar until smooth and creamy using a mixer.

Add Eggs and Vanilla

  • Add eggs one at a time, then vanilla extract. Beat until fully combined and smooth.

Add Lavender and Cream

  • Stir in lavender buds and heavy cream. Mix gently to avoid overmixing the batter.
  • Pour Filling into Pan
  • Pour cheesecake filling over cooled crust evenly. Smooth the top with a spatula.

Bake Cheesecake

  • Bake in preheated oven for 45–50 minutes. Center should be slightly jiggly but set.

Cool Completely

  • Remove from oven. Let cheesecake cool to room temperature. Refrigerate for at least 4 hours.

Prepare Blackberry Sauce

  • In a small saucepan, cook blackberries, sugar and lemon juice over medium heat until slightly thickened.

Top Cheesecake

  • Pour warm blackberry sauce over chilled cheesecake. Decorate with fresh blackberries as desired.
