Ingredients
  

  • 2 cups heavy cream
  • 1/2 cup sugar divided
  • 4 large egg yolks
  • 2 teaspoons vanilla extract
  • 2 tablespoons water
  • 2 teaspoons powdered gelatin
  • 1 cup fresh berries strawberries, blueberries, raspberries
  • Optional: mint leaves for garnish

Instructions
 

Bloom the Gelatin

  • Sprinkle gelatin over water in a small bowl. Let it sit for 5 minutes to bloom. This ensures it dissolves completely in the cream.

Heat Cream and Sugar

  • In a saucepan, heat 1 1/2 cups heavy cream with 1/4 cup sugar. Heat gently, stirring, until sugar dissolves but cream does not boil.

Whisk Egg Yolks

  • In a separate bowl, whisk egg yolks with remaining 1/4 cup sugar until smooth and slightly pale in color.

Temper the Eggs

  • Slowly pour hot cream into egg yolks, whisking constantly. This prevents eggs from curdling and creates a smooth custard.

Cook the Custard

  • Return mixture to saucepan. Cook over low heat, stirring constantly, until thick enough to coat the back of a spoon.

Add Gelatin and Vanilla

  • Remove from heat. Stir in bloomed gelatin and vanilla extract until fully dissolved and smooth.

Chill the Mixture

  • Pour custard into a bowl. Let it cool to room temperature. Refrigerate for about 1 hour to thicken slightly.

Whip Remaining Cream

  • Whip remaining 1/2 cup heavy cream until soft peaks form. Fold gently into chilled custard for light, airy texture.

Assemble Dessert

  • Spoon Bavarian cream into serving bowls or ramekins. Top with fresh berries. Garnish with mint if desired.

Chill Before Serving

  • Refrigerate assembled dessert for at least 2 more hours. Serve cold for best flavor and texture.
