Ingredients

  • Thin beef slices top round or flank – 4 pieces
  • Breadcrumbs – 1/2 cup
  • Grated Parmesan cheese – 1/3 cup
  • Garlic cloves minced – 3
  • Fresh parsley chopped – 2 tbsp
  • Olive oil – 3 tbsp
  • Salt – 1 tsp
  • Black pepper – 1/2 tsp
  • Tomato sauce – 2 cups
  • Red pepper flakes optional – 1/4 tsp
  • Toothpicks or kitchen twine – for securing rolls

Instructions

Prepare the Beef

  • Place beef slices on a cutting board. If needed, pound with a meat mallet until thin and even. This ensures tender rolls and even cooking.

Make the Filling

  • In a mixing bowl, combine breadcrumbs, Parmesan cheese, garlic, parsley, salt and pepper. Mix well. This filling adds flavor and a slight crunch inside the beef.

Spread the Filling

  • Evenly spread the breadcrumb mixture over each beef slice. Leave a small border along the edges. This helps keep the filling inside during rolling.

Roll the Beef

  • Carefully roll each beef slice from one end to the other. Secure with toothpicks or kitchen twine. This keeps the braciole intact while cooking.

Sear the Rolls

  • Heat olive oil in a large skillet over medium heat. Add beef rolls and sear on all sides until golden brown. This seals in flavor and creates a nice crust.

Prepare the Sauce

  • In a large pot or Dutch oven, add tomato sauce and optional red pepper flakes. Heat gently over medium heat until warm.

Simmer the Braciole

  • Add seared beef rolls to the sauce. Cover and simmer over low heat for 1–1.5 hours. This slowly cooks the meat, making it tender and flavorful.

Check for Doneness

  • Make sure the beef is tender and fully cooked. Remove toothpicks or twine carefully. Spoon sauce over the braciole before serving.

Serve Hot

  • Serve braciole hot with sauce over pasta, polenta or roasted vegetables. Sprinkle extra Parmesan or parsley for garnish. Enjoy the classic Italian taste.

Notes

  • Pound beef thin for easy rolling.
  • Use fresh parsley and garlic for bright flavor.
  • Sear beef before simmering for extra flavor.
  • Simmer slowly to make meat tender.
  • Secure rolls tightly with toothpicks to prevent filling from falling out.
  • Add a pinch of red pepper flakes for mild heat.
  • Let braciole rest 5 minutes before slicing.
